Monopole was opened in December 2012 by chef Brent Savage and sommelier Nick Hildebrandt, the hospitality duo behind the award-winning Bentley Restaurant + Bar in Sydney’s CBD.
Following the success of Bentley, they wanted to experiment with a more casual wine bar concept, offering a compelling selection of wine and cocktails, matched with delicious, wine-friendly food. Nick’s wine list features more than 500 wines from around the world, with many exclusive to Monopole and offered by the glass or carafe.

At Monopole, the ownership team includes renowned sommelier Glen Goodwin, while long-time creative collaborator Pascale Gomes-McNabb has designed the interior.
