ヌベールのバウムクーヘンは、こだわりの小麦粉や米粉、卵を使用することでしっとりとした食感ともちもちとした食感が生まれます。また、しっとりを超えた潤いのある食感の「潤いばうむ」はパサつき感が全然なく、飲み物なしでも食べられるバウムクーヘンとして多くの方に愛されております。
