PAUL FÜRST (1856-1941) opened a confectionery shop at Brodgasse 13 on Salzburg’s Alter Markt marketplace square in 1884. This shop quickly became popular with Salzburg’s fashionable crowd.

 

His opening advertisement stated: “Drawing on years of experience in the most renowned confectionary workshops in Vienna, Pest, Paris, Nice and many more, he will strive to offer the best and newest...” And indeed, Paul Fürst did bring the art of confection from the metropolises of the world to Salzburg and in 1890, after extensive experimenting, he created a chocolate he named “Mozartkugel”.

 

This treat made of marzipan with pistachios, nougat and dark chocolate was to be characterised by its perfectly round shape. Each individual bonbon was placed on a small wooden stick before being dipped in chocolate.

In 1905 Paul Fürst received a gold medal for his famous confection at a Parisian exhibition.

 

He chose the name Mozartkugel to pay his respects to Salzburg’s own Wolfgang Amadeus Mozart, who at the time was actually not very popular. It was the new speciality’s quality and its delicate taste that made the Mozartkugel such a great success.
