AIRrepublic is a brasserie style restaurant created by chef Sergio Herman in the marina of Cadzand Bad. It’s located in a modern pavilion, overlooking the sea and the marina.

It is all about simple preparations with local Zeeland produce with fish, shellfish and crustaceans in a leading role on the menu. The focus of the kitchen is classic, inspired by Sergio’s roots. A lot of the dishes served in AIRrepublic were served once in the restaurant of Sergio’s father. Think on the famous fish soup that used to be served in Oud Sluis, marinated mussels, oysters in champagne sauce and the freshest langoustines possible. So mainly fish, shellfish and crustaceans, but all with a touch of Sergio.

The chef of AIRrepublic is Nicolas Misera. Besides the classic dishes from Sergio, he has clearly his own input on the menu. His friendship with Sergio goes back to the days that Sergio visited Nicolas’ late father, Hans Misera, restaurant ‘De Zwarte Ganze’ in Damme. Nicolas previously worked for Wout Bru in Eygalières, France and Carcasse in Koksijde, Belgium. Nicolas follows the kitchen philosophy from Sergio, who decides the style of the dishes.
